Honey Processing
Honey is a bit of a hybrid between Wet and Dry. There are 3 or 4 different Honey processes. White Honey has very little cherry pulp remaining on the parchment. And Black Honey has a large amount. The Black is preferred to White and Red because it has more sugar in the extra pulp resulting in a sweeter coffee.
Black is also the most inconsistent due to how easily it can start fermenting. We have to spread it very thin on the drying beds, and stir it constantly, to prevent unwanted fermentation. After 3 days it is past that stage and will not ferment any more. After 10 to 14 days it is fully dry and it has the texture of parchment with honey poured over it. It is sticky, and tends to clump together. That is when we know it is going to Taste great. If you like sweet coffees you should try some honeys.
